Ingredients
- 1 pound hamburger
- 1 package large soft tortilla shells
- 1 package shredded chedder cheese
- 1 small onion (chopped)
- 1 can tomatoe sauce (small can)
- 1 can enchilada sauce (10 0z can)
- 1 can refried beans (large can)
- 1 package taco seasoning mix
- 1 jar picante sauce
- 1 small head of lettuce (shredded)
- 1 medium container of sour cream
- 1 can sliced black olives (small)
How To Make enchilada casserole

Step 1Preheat oven to 350 degrees. Brown hamburger and onion together. Drain. Add taco seasoning, enchilada sauce, and tomatoe sauce. Let simmer.

Step 2In a 9 x 13 casserole dish, lay out two large tortilla shells to cover bottom. Spread a layer of refried beans on shells. Then put a layer of hamburger mixture, followed by a layer of chedder cheese. Repeat this 2 more times and end up with two shells on top with a layer of cheese.

Step 3Bake for about 45 minutes until all cheese is melted and the shells start turning a little brown on the edges. Let cool about 15 minutes.

Step 4Cut in slices. Serve with picante sauce, black olives, shredded lettuce, sour cream, etc.
