My family loves this easy version of my enchiladas! It's great for potlucks & game day grub!

Ingredients

  • 2 pounds lean ground beef
  • 2 tablespoons chopped garlic
  • 1 large yellow onion, chopped
  • 2 packages taco seasoning mix
  • 1 can red enchilada sauce
  • 18-20 - soft corn tortillas
  • 1 cup sliced black olives
  • 2-3 cans shredded monterry jack cheese
  • 1/2 can chopped green chiles
  • 1/4 cup sliced green onions

How To Make enchilada casserole

  • Step 1
    Brown ground beef with the chopped onion & garlic. Drain.
  • Step 2
    Add taco seasoning mix & 1 cup water to ground beef mixture. Simmer 5 mins.
  • Step 3
    Pour enchilada sauce into a pie plate or wide bowl. Spray a 9X13 glass pan with non-stick cooking spray, then layer, dipping 6 tortillas into sauce, covering completely, & laying onto bottom of pan. Continue with 1/2 of ground beef mixture, 1/2 cup black olives, 1/4 cup green chillies, & cheese to taste. Repeat for another layer.
  • Step 4
    The final layer will be six of the dipped tortillas, cheese & green onions. Save or freeze any remaining enchilada sauce for another recipe!
  • Step 5
    Bake at 400 degrees for 25 mins or until cheese is melted & bubbly. Serve with your favorite Mexican trimmings & sauces.
