How to Make Enchilada Casserole

  • 1Brown ground beef with the chopped onion & garlic. Drain.
  • 2Add taco seasoning mix & 1 cup water to ground beef mixture. Simmer 5 mins.
  • 3Pour enchilada sauce into a pie plate or wide bowl. Spray a 9X13 glass pan with non-stick cooking spray, then layer, dipping 6 tortillas into sauce, covering completely, & laying onto bottom of pan. Continue with 1/2 of ground beef mixture, 1/2 cup black olives, 1/4 cup green chillies, & cheese to taste. Repeat for another layer.
  • 4The final layer will be six of the dipped tortillas, cheese & green onions. Save or freeze any remaining enchilada sauce for another recipe!
