  • 1 can(s)

  • 2-3 can(s)
    shredded monterry jack cheese
  • 1/2 can(s)
    chopped green chiles
  • 1/4 c

How to Make Enchilada Casserole

Step-by-Step

  1. Brown ground beef with the chopped onion & garlic. Drain.
  2. Add taco seasoning mix & 1 cup water to ground beef mixture. Simmer 5 mins.
  3. Pour enchilada sauce into a pie plate or wide bowl. Spray a 9X13 glass pan with non-stick cooking spray, then layer, dipping 6 tortillas into sauce, covering completely, & laying onto bottom of pan. Continue with 1/2 of ground beef mixture, 1/2 cup black olives, 1/4 cup green chillies, & cheese to taste. Repeat for another layer.
  4. The final layer will be six of the dipped tortillas, cheese & green onions. Save or freeze any remaining enchilada sauce for another recipe!
  5. Bake at 400 degrees for 25 mins or until cheese is melted & bubbly. Serve with your favorite Mexican trimmings & sauces.
