Ingredients
- 1 can las palmas enchilada sauce (mild)
- 1 - diced large onion
- 1 pound hamburger meat
- 1 package corn tortillas (12)
- 1 can refried beans
- 12 teaspoons sour cream
- 1 can sliced black olives
- 1 package shredded cheddar cheese (coby jack is ok)
How To Make enchilada casserole

Step 1In frying pan, brown meat and onions over medium heat, when cooked add enchilada sauce let simmer for 10 minutes, and shut off.

Step 2Spread one tortilla with cold refried beans, continue until you have one layer in a 13x9. Top each tortilla with a tablespoon of meat mixture, top with 1 teaspoon sour cream and a olives to taste, add cheese and repeat layering until the pan is filled. If you have any leftover sauce, pour over casserole.

Step 3Cook in oven at 350 degrees for 30 minutes. Enjoy
