I made this recipe up a few years ago, its one of my family's favorites.

Ingredients

1 can(s)
las palmas enchilada sauce (mild)
1
diced large onion
1 lb
hamburger meat
1 pkg
corn tortillas (12)
1 can(s)
refried beans
12 tsp
sour cream
1 can(s)
sliced black olives
1 pkg
shredded cheddar cheese (coby jack is ok)

How to Make Enchilada Casserole

Step-by-Step

  • 1In frying pan, brown meat and onions over medium heat, when cooked add enchilada sauce let simmer for 10 minutes, and shut off.
  • 2Spread one tortilla with cold refried beans, continue until you have one layer in a 13x9. Top each tortilla with a tablespoon of meat mixture, top with 1 teaspoon sour cream and a olives to taste, add cheese and repeat layering until the pan is filled. If you have any leftover sauce, pour over casserole.
  • 3Cook in oven at 350 degrees for 30 minutes.
