enchilada casserole

My family pulled together recently during a crisis. At any one time there were 6 - 7 adults to feed. I took the first couple of days and my sister took some and together we managed quite well. This recipe is one that she made and it was really REALLY good. So I took it home and made sure I could duplicate it with similar results (or in this case, my husband could duplicate it). And now it's in MY cookbook!

Ingredients

  • 1 pound ground beef
  • 1 small onion
  • 1 small can diced green chili peppers
  • 1 package taco seasoning
  • 1/4 cup italian dressing
  • 1 can black beans
  • 1 can diced tomatoes
  • 8 - tortillas
  • 1 medium container sour cream
  • 1 package shredded cheese

How To Make enchilada casserole

  • Step 1
    Brown the ground beef with the onion. Add the peppers, taco seasoning, dressing, beans, and tomatoes.
  • Step 2
    Spray a 9" x 13" pan with non-stick cooking spray. Layer 2 tortillas in the bottom and 1/3 of the meat mix. Dot with some sour cream and cheese. Repeat layers twice more. Top with last 2 tortillas and some cheese.
  • Step 3
    Bake at 350*F for 20 minutes.
