I know there are quite a few recipes for this out there; this one is a little different that my family loves. This was a staple when they were growing up

Ingredients

  • 1 lb
    ground beef
  • 1 can(s)
    cream of mushroom soup
  • 1 can(s)
    enchilada sauce (14 oz)
  • 1/2 c
    onion, chopped
  • 1 can(s)
    rotel
  • 1 c
    colby jack cheese, shredded
  • ·
    tortilla chips
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    cumin
  • 1/2 tsp
    garlic powder

How to Make Enchilada Casserole

Step-by-Step

  1. Brown ground beef, onions, pepper, cumin and garlic. Cook until done (pink is gone); drain off grease; stir in green chiles
  2. Add soup and sauce; stir until all combined and heated through
  3. In greased 9x13 pan, sprinkle crushed tortillas to cover bottom of pan.
  4. Pour beef/soup mixture off tortillas and sprinkle with shredded cheese
  5. Bake in 350 degree oven for 20 minutes or until bubbly.
