I know there are quite a few recipes for this out there; this one is a little different that my family loves. This was a staple when they were growing up

Ingredients

  • 1 pound ground beef
  • 1 can cream of mushroom soup
  • 1 can enchilada sauce (14 oz)
  • 1/2 cup onion, chopped
  • 1 can rotel
  • 1 cup colby jack cheese, shredded
  • - tortilla chips
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder

How To Make enchilada casserole

  • Step 1
    Brown ground beef, onions, pepper, cumin and garlic. Cook until done (pink is gone); drain off grease; stir in green chiles
  • Step 2
    Add soup and sauce; stir until all combined and heated through
  • Step 3
    In greased 9x13 pan, sprinkle crushed tortillas to cover bottom of pan.
  • Step 4
    Pour beef/soup mixture off tortillas and sprinkle with shredded cheese
  • Step 5
    Bake in 350 degree oven for 20 minutes or until bubbly.
