I know there are quite a few recipes for this out there; this one is a little different that my family loves. This was a staple when they were growing up

ground beef
1 can(s)
cream of mushroom soup
1 can(s)
enchilada sauce (14 oz)
1/2 c
onion, chopped
1 can(s)
1 c
colby jack cheese, shredded
tortilla chips
1/2 tsp
black pepper
1/2 tsp
1/2 tsp
garlic powder

How to Make Enchilada Casserole


  • 1Brown ground beef, onions, pepper, cumin and garlic. Cook until done (pink is gone); drain off grease; stir in green chiles
  • 2Add soup and sauce; stir until all combined and heated through
  • 3In greased 9x13 pan, sprinkle crushed tortillas to cover bottom of pan.
  • 4Pour beef/soup mixture off tortillas and sprinkle with shredded cheese
  • 5Bake in 350 degree oven for 20 minutes or until bubbly.
