My mom and aunt would make this recipe. Very flavorful and easy to make.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon minced onion
  • 1/2 teaspoon garlic salt
  • 2 cans tomato sauce (8 oz each)
  • 1 cup sliced black olives
  • 1 cup sour cream
  • 1 cup small curd cottage cheese
  • 1 package tortilla chips
  • 2 cups grated cheese (1/2 pound)
  • 3-4 cans canned diced green chilies

How To Make el dorado beef casserole

  • Step 1
    Preheat oven to 350'
  • Step 2
    Brown meat in skillet. Drain.
  • Step 3
    Add onion, garlic, olives and tomato sauce.
  • Step 4
    In a bowl, combine sour cream, cottage cheese and chilies.
  • Step 5
    Layer crushed tortilla chips in bottom of a buttered 2 1/2 qt casserole dish.
  • Step 6
    Layer with 1/2 of the meat mixture.
  • Step 7
    Layer with 1/2 of the sour cream mixture.
  • Step 8
    Layer with 1/2 of the grated cheese.
  • Step 9
    Repeat the 4 layers.
  • Step 10
    Garnish with whole tortilla chips, if desired.
  • Step 11
    Bake for 30 minutes.
