eggplant casserole
This is one of my son's absolute favorites! Heck, all of his mother's cooking is his favorite! But he does love this recipe as do I. Not difficult, rather fast and easy to make too. For a vegitarian fare... just leave out the ground beef.

Ingredients
- 1 - egg plant
- 1 pound lean ground beef
- 1/4 cup onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon flour
- 1 teaspoon salt
- 1/4 teaspoon dried oregano
- dash pepper
- 2 large ripe tomatoes
- 1 cup grated cheddar cheese
- 1 clove garlic, minced
How To Make eggplant casserole

Step 1Brown beef, onion and garlic in olive oil. Add flour and rest of seasonings. Stir and cook 5 minutes

Step 2Peel and slice eggplant. Boil in salted water until just tender. Drain and set aside in colander.

Step 3Put beef in bottom of 1 1/2 quart casserole. Arrange eggplant on top and then sliced tomatoes. Sprinkle with sea salt, pepper and grated cheese. Bake in 350 degree oven for 30 to 40 minutes.
