I named this after my ex Father in law, may he rest in peace, he was a good cook. This is revised, because Ed would put potatoes, carrots and burger in some foil and stick it in the oven til the potatoes were cooked through.

Ingredients For ed's revised hobo stew

  • 1 box scalloped potatoe mix
  • 1 large carrot shredded
  • 2 lbs hamburger
  • 2/3 cup frozen stirfry peppers and onions

How To Make ed's revised hobo stew

    spray baking pan for mixture. Make the potato mix, by following the directions on the box, in a bowl, for measurements of ingredients it asks for. the water is hot, be careful

    brown the burger, pepper and garlic powder to taste, add stirfry veggies
  • 3
    after preheating the oven according to the box directions, put the hamburger mix in the baking pan, grate the carrots and layer over burger onion pepper mix, carefully spoon the potatoes and sauce over that. loosely cover with aluminium foil and put in oven, after the first 15 minutes take off the foil and time it for another 5 minutes
