easy versatile tex-mex meal

My family loves this because it's so easy to make that any of us can throw it together and it's so versatile everyone can make it their own. Wrap it up into a burrito! Serve over chips! Use as a taco salad filling! My son uses it in the sandwich maker to make his own 'hot pockets'. Freezes well.

Ingredients
- 1 pound lean ground beef
- 1 package taco seasoning mix
- 1 can tomato with green chiles (rotel)
- 1 can each ranch style and black beans
- 1 can corn, undrained
- 3/4 cup instant rice (uncooked)
- 1 pound velveeta, cubed
- - optional - jalapenos, black olives, lettuce, sour cream, salsa, onions, chips, corn or flour tortillas
How To Make easy versatile tex-mex meal

Step 1Brown the meat with the taco seasoning.

Step 2Add remaining ingredients except cheese. Simmer, covered, approx 15 mins until rice is cooked to taste.

Step 3Stir in Velveeta. Let sit a few minutes to soften then stir again to mix.

Step 4Add optional ingredients as desired. Or put all optional ingredients out for each person to complete their plate their way!
