My husband has never been a fan of meatloaf, claiming it is always to "bready," dry and flavorless. After tasting this recipe, he's a new fan.

  • 1 lb
    ground beef (80/20)
  • 1 1/4 tsp
  • 1/4 tsp
    fresh ground black pepper
  • 1/2 c
    onion, finely chopped
  • 1/2 c
    green bell pepper, finely chopped (or pablano pepper)
  • 1/2 c
    red or yellow pepper, finely chopped
  • 1 Tbsp
    canola oil
  • 1
    egg, lightly beaten
  • 10 oz
    can rotel "original"
  • 1/2 c
    quick-cooking oats
  • 1 Tbsp
    worcestershire sauce

  • 8 oz
    tomato sauce (basil, garlie & oregano)
  • 6 oz
    tomato paste (basil, garlic & oregano)
  • 1/4 c
    sugar (or splenda)
  • 2 tsp
    apple cider vinegar
  • 2 tsp
    yellow mustard

How to Make Easy Spicy Meatloaf


  1. Preheat oven to 350 degrees.
  2. In a small mixing bowl, whisk together topping ingredients and set aside.
  3. In a large mixing bowl, add ground beef, salt and pepper. With a fork, lightly "stir/separate" ground beef.
  4. In a skillet with a small amount of canola oil, saute onions and peppers for 8 to 10 minutes or until onions become translucent. Remove from heat.
  5. Add egg, Rotel, oats, Worcestershire sauce and sauteed pepper mixture to hamburger. Gently mix with clean hands until ingredients are incorporated.
  6. Transfer to a 13x9 baking pan and shape meat mixture into a "loaf." Pour topping mixture on top and sides if desired.
  7. Bake uncovered for 1 hour. Let stand 10 minutes before serving.
