easy spicy meatloaf

My husband has never been a fan of meatloaf, claiming it is always to "bready," dry and flavorless. After tasting this recipe, he's a new fan.

Ingredients

  • 1 pound ground beef (80/20)
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/2 cup onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped (or pablano pepper)
  • 1/2 cup red or yellow pepper, finely chopped
  • 1 tablespoon canola oil
  • 1 - egg, lightly beaten
  • 10 ounces can rotel "original"
  • 1/2 cup quick-cooking oats
  • 1 tablespoon worcestershire sauce
  • TOPPING:
  • 8 ounces tomato sauce (basil, garlie & oregano)
  • 6 ounces tomato paste (basil, garlic & oregano)
  • 1/4 cup sugar (or splenda)
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons yellow mustard

How To Make easy spicy meatloaf

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a small mixing bowl, whisk together topping ingredients and set aside.
  • Step 3
    In a large mixing bowl, add ground beef, salt and pepper. With a fork, lightly "stir/separate" ground beef.
  • Step 4
    In a skillet with a small amount of canola oil, saute onions and peppers for 8 to 10 minutes or until onions become translucent. Remove from heat.
  • Step 5
    Add egg, Rotel, oats, Worcestershire sauce and sauteed pepper mixture to hamburger. Gently mix with clean hands until ingredients are incorporated.
  • Step 6
    Transfer to a 13x9 baking pan and shape meat mixture into a "loaf." Pour topping mixture on top and sides if desired.
  • Step 7
    Bake uncovered for 1 hour. Let stand 10 minutes before serving.
