My husband has never been a fan of meatloaf, claiming it is always to "bready," dry and flavorless. After tasting this recipe, he's a new fan.

ground beef (80/20)
1 1/4 tsp
1/4 tsp
fresh ground black pepper
1/2 c
onion, finely chopped
1/2 c
green bell pepper, finely chopped (or pablano pepper)
1/2 c
red or yellow pepper, finely chopped
1 Tbsp
canola oil
egg, lightly beaten
10 oz
can rotel "original"
1/2 c
quick-cooking oats
1 Tbsp
worcestershire sauce


8 oz
tomato sauce (basil, garlie & oregano)
6 oz
tomato paste (basil, garlic & oregano)
1/4 c
sugar (or splenda)
2 tsp
apple cider vinegar
2 tsp
yellow mustard

How to Make Easy Spicy Meatloaf


  • 1Preheat oven to 350 degrees.
  • 2In a small mixing bowl, whisk together topping ingredients and set aside.
  • 3In a large mixing bowl, add ground beef, salt and pepper. With a fork, lightly "stir/separate" ground beef.
  • 4In a skillet with a small amount of canola oil, saute onions and peppers for 8 to 10 minutes or until onions become translucent. Remove from heat.
  • 5Add egg, Rotel, oats, Worcestershire sauce and sauteed pepper mixture to hamburger. Gently mix with clean hands until ingredients are incorporated.
  • 6Transfer to a 13x9 baking pan and shape meat mixture into a "loaf." Pour topping mixture on top and sides if desired.
  • 7Bake uncovered for 1 hour. Let stand 10 minutes before serving.
