easy shepherd's pie
This started as my Mom's recipe which I've tweaked over the years. When you have leftover mashed potatoes, it makes a quick and easy dinner. I change up the veggies depending on what is on hand. Sometimes I add corn instead of peas.

Ingredients
- 1 1/2 pounds ground beef
- 2 large carrots, finely chopped
- 1 large onion, finely chopped
- 1/2 pound mushrooms, sliced
- 1/2 cup frozen peas
- 2 packages brown gravy powder
- 1 cup water
- 3 cups leftover mashed potatoes
- 1/2 teaspoon paprika (for sprinkling)
How To Make easy shepherd's pie

Step 1Preheat oven to 350 F. Brown ground beef, with onion, carrot and mushrooms. When beef is browned and veggies are almost cooked, add the gravy mix and water. Bring to a boil, stirring until gravy is thickened.

Step 2Add peas and put mixture into a 2 quart casserole dish.

Step 3Add leftover mashed potatoes over beef mixture. Sprinkle paprika on top and bake uncovered for 45 minutes.
