This started as my Mom's recipe which I've tweaked over the years. When you have leftover mashed potatoes, it makes a quick and easy dinner. I change up the veggies depending on what is on hand. Sometimes I add corn instead of peas.

ground beef
2 large
carrots, finely chopped
1 large
onion, finely chopped
1/2 lb
mushrooms, sliced
1/2 c
frozen peas
2 pkg
brown gravy powder
1 c
3 c
leftover mashed potatoes
1/2 tsp
paprika (for sprinkling)

How to Make Easy Shepherd's Pie


  • 1Preheat oven to 350 F. Brown ground beef, with onion, carrot and mushrooms. When beef is browned and veggies are almost cooked, add the gravy mix and water. Bring to a boil, stirring until gravy is thickened.
  • 2Add peas and put mixture into a 2 quart casserole dish.
  • 3Add leftover mashed potatoes over beef mixture. Sprinkle paprika on top and bake uncovered for 45 minutes.
