This recipe won the People's Choice Award at the 2007 South Dakota State Beef Cook-off Contest. Quick cooking...under 1 hour and tasty, too! Serve with a green salad on the side for a complete meal.

Ingredients

  • 1 package kraft macaroni and cheese
  • 1 pound lean hamburger
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup sweet green and or red peppers, chopped
  • 1 package taco seasoning mix
  • 3/4 cup water
  • 1 can corn kernels, drained
  • 1 can black beans, drained and rinsed
  • 1 cup sour cream
  • 1 1/2 cups cheddar cheese, shredded and divided
  • 1 cup salsa
  • 1/2 cup tortilla chips, coarsely crushed
  • - sliced black olives (optional)

How To Make easy hamburger taco bake

  • Step 1
    Preheat oven to 400 degrees. Prepare 9x9 or 9x13 pan with no-stick spray.
  • Step 2
    Prepare macaroni and cheese as directed on package. Stir in sour cream and set aside.
  • Step 3
    Brown hamburger, onions, garlic and peppers until meat is no longer pink, breaking up meat as you go. Drain.
  • Step 4
    To meat mixture add taco seasoning mix, water, corn and black beans. Simmer about 5 minutes.
  • Step 5
    Spoon half of the macaroni mixture into prepared pan.
  • Step 6
    Spoon all of the meat mixture on top of macaroni.
  • Step 7
    Take 1 cup of cheddar cheese and sprinkle on top of meat mixture.
  • Step 8
    Spoon rest of macaroni on top. Cover and bake about 15 minutes.
  • Step 9
    Top with salsa, chips, remaining cheese, and black olives. Bake, uncovered, 5 more minutes or until cheese is melted. Take out of oven and let sit for about 5 minutes to set up. Serve and enjoy!
