While nursing @ a long-term care facility, the daughter of a patient gave me this recipe. It is very easy and was a big hit with my three children.

1 lb
ground chuck
1 pkg
cream cheese
1 pkg
floured tortillas
1 jar(s)
enchilada sauce ( can or jar)
1 pkg
schredded cheese of your choice, i use mexican cheeses
8-16 oz
sour cream, lite

How to Make Easy Enchilados


  • 1Brown 1 lb. of ground beef, I use ground chuck. Drain off grease.
  • 2Add 1 block of cream cheese til well blended.
  • 3Roll meat mixture up into floured tortillas (tightly).
  • 4Line prepared tortillas in baking dish, pour on jar or can of enchilado sauce. Cheese can be added to top during baking or after removed from oven.
  • 5Bake @ 350 degrees for approx. 25 minutes.
  • 6Sour cream is optional. My family like to use it as a dip.
