While nursing @ a long-term care facility, the daughter of a patient gave me this recipe. It is very easy and was a big hit with my three children.

1 lb
ground chuck
1 pkg
cream cheese
1 pkg
floured tortillas
1 jar(s)
enchilada sauce ( can or jar)
1 pkg
schredded cheese of your choice, i use mexican cheeses
8-16 oz
sour cream, lite


1Brown 1 lb. of ground beef, I use ground chuck. Drain off grease.
2Add 1 block of cream cheese til well blended.
3Roll meat mixture up into floured tortillas (tightly).
4Line prepared tortillas in baking dish, pour on jar or can of enchilado sauce. Cheese can be added to top during baking or after removed from oven.
5Bake @ 350 degrees for approx. 25 minutes.
6Sour cream is optional. My family like to use it as a dip.
