easy enchilados

While nursing @ a long-term care facility, the daughter of a patient gave me this recipe. It is very easy and was a big hit with my three children.

Ingredients

  • 1 pound ground chuck
  • 1 package cream cheese
  • 1 package floured tortillas
  • 1 jar enchilada sauce ( can or jar)
  • 1 package schredded cheese of your choice, i use mexican cheeses
  • 8-16 ounces sour cream, lite

How To Make easy enchilados

  • Step 1
    Brown 1 lb. of ground beef, I use ground chuck. Drain off grease.
  • Step 2
    Add 1 block of cream cheese til well blended.
  • Step 3
    Roll meat mixture up into floured tortillas (tightly).
  • Step 4
    Line prepared tortillas in baking dish, pour on jar or can of enchilado sauce. Cheese can be added to top during baking or after removed from oven.
  • Step 5
    Bake @ 350 degrees for approx. 25 minutes.
  • Step 6
    Sour cream is optional. My family like to use it as a dip.
