So easy and yummy!!! Make ahead and freeze for a week for an even eaiser meal!!!!!

Ingredients

  • 18 - corn tortillas
  • 1 package taco seasoning mix
  • 1 pound hamburger
  • 1 pound turkey
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 8 ounces monterey jack cheese
  • 1 jar salsa, chunky
  • - olive oil

How To Make easy enchiladas

  • Step 1
    First Fry tortillas (1) at a time in small amount of olive oil until crispy on both sides. Place separately on a cookie sheet lined with paper towels. Now sauté onion and garlic, when onions are becoming translucent add hamburger and turkey and cook thoroughly. Next mix in ½ of the pack of taco seasoning and ½ of the salsa to the meat, add ½ cup of water and cook for 5 min.
  • Step 2
    In a small pot bring to boil 1 cup of water and add the rest of the taco seasoning stir well, now dip tortillas (1) at a time into the mixture and line a baking dish with six dipped tortillas. Add ½ of the meat mixture sprinkle a handful of cheese over it and repeat this step one more time. Next place the last 6 tortillas on top and sprinkle the rest of the cheese over the top. Bake for about 15 min. at 400*. Cool for 10 min serve with a dollop of sour cream and salsa. Enjoy?
