Ingredients

  • 1 c
    onion, sliced
  • 1 c
    mushrooms, sliced
  • 1 tsp
    safflower oil
  • 1/3 c
    dry sherry
  • 1 lb
    beef sirloin steak, boneless
  • 2
    serrano peppers, finely chopped
  • 1/2 tsp
    cumin
  • 1/4 tsp
    coriander, ground
  • 1 tsp
    cilantro leaves, finely chopped
  • 4 large
    flour tortillas
  • 1/2 c
    salsa
  • 1/2
    avocado, peeled and sliced
  • 1 c
    yogurt, low-fat, plain

How to Make Easy Beef Fajitas

Step-by-Step

  1. In a large skillet over medium-high heat, saute
    onions and mushrooms in oil and sherry for 10 minutes.
  2. Cut steak into 1-1/2-inch strips and add to saute, cooking for 2 minutes more.
  3. Add chiles, cumin, coriander and cilantro, and cook 3 more minutes, stirring frequently.
  4. Warm tortillas in toaster oven or conventional
    oven.
  5. Arrange bowls of salsa, sliced avocado and yogurt on a tray.
  6. Wrap warmed tortillas in clean cloth napkin.
  7. Serve meat filling out of skillet or in prewarmed serving dish.
