Ingredients

  • 1 cup onion, sliced
  • 1 cup mushrooms, sliced
  • 1 teaspoon safflower oil
  • 1/3 cup dry sherry
  • 1 pound beef sirloin steak, boneless
  • 2 - serrano peppers, finely chopped
  • 1/2 teaspoon cumin
  • 1/4 teaspoon coriander, ground
  • 1 teaspoon cilantro leaves, finely chopped
  • 4 large flour tortillas
  • 1/2 cup salsa
  • 1/2 - avocado, peeled and sliced
  • 1 cup yogurt, low-fat, plain

How To Make easy beef fajitas

  • Step 1
    In a large skillet over medium-high heat, saute onions and mushrooms in oil and sherry for 10 minutes.
  • Step 2
    Cut steak into 1-1/2-inch strips and add to saute, cooking for 2 minutes more.
  • Step 3
    Add chiles, cumin, coriander and cilantro, and cook 3 more minutes, stirring frequently.
  • Step 4
    Warm tortillas in toaster oven or conventional oven.
  • Step 5
    Arrange bowls of salsa, sliced avocado and yogurt on a tray.
  • Step 6
    Wrap warmed tortillas in clean cloth napkin.
  • Step 7
    Serve meat filling out of skillet or in prewarmed serving dish.
