easy beef casserole

When I was pregnant with my daughter, I was put on complete bed rest. I had a one year old and a two year old. My husband had to work so his wonderful mother came to our house every day to take care of the boys and me. Every day she brought us something for dinner that Mike just had to put in the oven and warm up. This is one of the things she brought us. I got the recipe from her and we have been eating it ever since. ( My daughter is 20 now.)

Ingredients

  • 18 ounces bbq sauce (i use kraft hickory)
  • 2 cups biscuit mix
  • 2 cups grated cheddar cheese
  • 2 - eggs
  • 1 cup milk
  • 1 pound ground beef
  • 3/4 cup chopped sweet onion

How To Make easy beef casserole

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    In a skillet, cook ground beef and onion until beef is browned and onion is translucent. Drain the grease well.
  • Step 3
    Stir in the BBQ sauce. Mix well.
  • Step 4
    Spoon the mixture into a 9 x 13 inch baking dish.
  • Step 5
    Sprinkle the cheese evenly over the beef mixture.
  • Step 6
    In a bowl, stir together the biscuit mix, eggs, and milk until well blended.
  • Step 7
    Pour this carefully over the beef mixture.
  • Step 8
    Bake for 25 minutes or until the crust is golden brown.
