dyno-o-mite asian meatballs

Theses are great!!! Another one of my favorite foods...meatballs. I made these for dinner today so this is a picture of the actual dinner I ate.....LOL I made tasty rice too and a salad....really is delicious.

Ingredients

  • 2 pounds ground beef
  • 2 - large eggs
  • 1/2 cup breadcrumbs ( i use panko)
  • 1/2 cup hoisin sauce
  • 1 teaspoon freshly grated ginger

How To Make dyno-o-mite asian meatballs

  • Step 1
    Asian Sauce: 1 cup Apricot Jam 1/2 cup hoisin sauce 1/2 cup rice vinegar 1/2 tsp grated fresh ginger 1/8 tsp cayenne pepper
  • Step 2
    Line 2 sheets with foil and grease.. Combine meat, eggs breadcrumbs, hoisin sauce and ginger. Shape into walnut size balls, making approx 60 balls. Bake at 375 for approx 25 minutes , turning at half time. Remove and drain on paper towels. Mix sauce ingredients in pot and heat till well blended. Add meatballs , stir and serve. I cut this recipe in half as there is just two of us. TIP: I freeze my fresh ginger and take it out 5 minutes before grating. I always have fresh ginger and it never spoils.
