den's stew
The secret ingredient (which you can't taste): BEER! This is my husband Dennis' favorite meal. he would eat it happily as often as i would make it. It came from an old cookbook of mine called "Cooking with Style," by Charlotte Adams.

Ingredients
- 6 slices bacon (cut into 1" pieces)
- 1 1/2 pounds top round steak, cut into 1" pieces)
- 1/2 - green pepper, cubed (**note: also use 1/2 red bell pepper, cut into strips)
- 1 medium onion, sliced
- 15 or so - cherry or grape tomatoes
- 1/2 cup beef stock (or beef bouillon) (or canned beef broth)
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon chili powder
- - fresh ground pepper
- 6 large mushrooms, halved
- 1 can beer (tall can )
- 2 tablespoons cornstarch (to thicken), along with
- 2 tablespoons red wine vinegar
How To Make den's stew

Step 1Assemble all ingredients. Makes everything go much smoother. PREP: wash veggies (green pepper, tomatoes, mushrooms). Cut up bacon, meat, pepper, onion; half the mushrooms.

Step 2PREP: wash veggies (green and red pepper, tomatoes, mushrooms). Fry bacon, remove when crisp and set aside on paper towel.

Step 3Brown meat (well) in bacon fat over high heat and remove from pan.

Step 4Reduce heat in pan to very low, and add green pepper and onions. Simmer 5 minutes.

Step 5Put meat back into pan, with any juice which may have escaped from it. Stir in mushroom halves.

Step 6Add: tomatoes, beef stock, sugar, salt, pepper, and chili powder. Cover with beer. Bring to a boil, reduce to a simmer, cover, and simmer one hour.

Step 7Add the saved crispy bacon. Simmer 15 minutes longer.

Step 8Mix cornstarch with vinegar, and add to stew to thicken sauce.

Step 9Serve with rice. YUMM.
