dee dee's toss it together beef casserole
Ever have stuff in the fridge that you know you’ve got to cook soon or it’s going to go bad? Well I had a pound of ground beef I couldn’t refreeze, a couple of baked potatoes leftover from a meal the day before, some mushrooms, onion and a couple of carrots I didn’t want to go to waste so I threw them all together for a rather tasty casserole. Hope you enjoy!

Ingredients
- 1 pound ground beef
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup fresh mushrooms, sliced
- 1/2 cup corn kernels, canned
- 2 tablespoons chives, dried
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon italian seasoning
- 2 large baked potatoes, peeled and sliced rounds
- 1 can cream of mushroom soup
- 1/4 cup milk
- 2 cups sharp cheddar cheese, shredded

Step 1Preheat oven to 350 degrees.

Step 2Brown ground beef. In another sauce pan, sauté onions, garlic and mushrooms until tender. Combine beef and sautéed veggies together; add carrot, corn, chives, salt, pepper, and Italian seasoning.

Step 3Pour ground beef mixture into a greased casserole dish; cover with potato rounds.

Step 4Mix cream of mushroom soup with milk and pour over potatoes; top with shredded cheese.

Step 5Bake for about 30 minute or until bubbly around edges of casserole. Serve
