Ever have stuff in the fridge that you know you’ve got to cook soon or it’s going to go bad? Well I had a pound of ground beef I couldn’t refreeze, a couple of baked potatoes leftover from a meal the day before, some mushrooms, onion and a couple of carrots I didn’t want to go to waste so I threw them all together for a rather tasty casserole. Hope you enjoy!

Ingredients

  • 1 pound ground beef
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fresh mushrooms, sliced
  • 1/2 cup corn kernels, canned
  • 2 tablespoons chives, dried
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon italian seasoning
  • 2 large baked potatoes, peeled and sliced rounds
  • 1 can cream of mushroom soup
  • 1/4 cup milk
  • 2 cups sharp cheddar cheese, shredded

How To Make dee dee's toss it together beef casserole

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Brown ground beef. In another sauce pan, sauté onions, garlic and mushrooms until tender. Combine beef and sautéed veggies together; add carrot, corn, chives, salt, pepper, and Italian seasoning.
  • Step 3
    Pour ground beef mixture into a greased casserole dish; cover with potato rounds.
  • Step 4
    Mix cream of mushroom soup with milk and pour over potatoes; top with shredded cheese.
  • Step 5
    Bake for about 30 minute or until bubbly around edges of casserole. Serve
