When I was growin-up my dad would make this dish and mom would make her gravy out of pan dripping.

Ingredients

  • 3 pounds chuck steak, lean
  • 1/2 cup flour
  • 1 can dice tomatoes
  • 1 - onions
  • 2 - carrots
  • 1 - larg green pepper
  • 1/2 - chopped olives
  • 1/2 cup olive oil

How To Make dad's swiss steak(marty burks)

  • Step 1
    My dad didn't use a meat malet he took a knife and slice hafe way through the meat not all the way through criscrosse the meat on both side. Heat a iron skillet with oil. Salt& pepper flour. Dust both side of meat. Place meat in hot oil brown both side. Copped onion,carrot,green pepper.
  • Step 2
    Add chopped veggies on top of meat add tomatoes,olive. Add water about 1/2 c. to the meat. Cover whith a lid and simmer for 3hr.
  • Step 3
    Take the meat out of skillet. With the dripping make a gravy.
