daddy's killer meatloaf

This is my dad's recipe and it is the best meatloaf, and anyone who has tried it has said as much. Ladies where I used to work even paid him to make this for them. Quite the boost to my widowed father! We dig ramps here in the Smoky Mountains in the spring and I have substituted the onion with ramps. My stepson says he does not like meatloaf, but with the ramps, he actually ate the leftovers!!!

Ingredients

  • 1 pound ground chuck
  • 8 ounces tomato sauce
  • 1 - egg
  • 1 medium onion, chopped
  • 1 cup oatmeal, (whole grain, old fashioned)
  • 1 cup ketchup
  • 1 cup hunt's original bbq sauce
  • 1 cup water

How To Make daddy's killer meatloaf

  • Step 1
    Mix together ground chuck, tomato sauce, egg, onion, and oatmeal. Form into a loaf in center of 9x12 pan, leaving space on either side of meatloaf. Bake at 350 for 45 minutes.
  • Step 2
    For glaze: Mix together ketchup, BBQ sauce and water. Pour over cooked meatloaf and return to oven. Bake for additional 20 minutes.
