- 2 pounds beef chuck roast boneless, cut into cubes
- 4 tablespoons olive oil, extra virgin
- 4 to 6 - jalapeno peppers
- 1 medium onion
- 2 cloves garlic minced
- 1/2 - bell pepper
- 8 - tomatillos
- 1 can tomato sauce
- 1 1/2 cups beef broth
- 3 tablespoons cilantro, fresh
- 1 tablespoon paprika
- 2 teaspoons cumin
- 1 teaspoon salt

Step 1Brown beef in hot oil in large skillet

Step 2Dice jalepeno discarding seeds and membranes

Step 3Add to beef with, onions, garlic and green pepper

Step 4Husk tomatillos, wash and chop, add to beef mixture. Add tomato sauce, beef broth and seasonings; bring to a boil

Step 5Reduce heat and simmer for about 2 hours or until beef is tender.

Step 6You can use habanero chili peppers, if you want hotter chili. Great served with cornbread or Jalpeno cornbread
