Ingredients For cyclone chili stew

  • 2 lb
    beef chuck roast boneless, cut into cubes
  • 4 Tbsp
    olive oil, extra virgin
  • 4 to 6
    jalapeno peppers
  • 1 md
    onion
  • 2 clove
    garlic minced
  • 1/2
    bell pepper
  • 8
    tomatillos
  • 1 can
    tomato sauce
  • 1 1/2 c
    beef broth
  • 3 Tbsp
    cilantro, fresh
  • 1 Tbsp
    paprika
  • 2 tsp
    cumin
  • 1 tsp
    salt
  • pepper

How To Make cyclone chili stew

  • 1
    Brown beef in hot oil in large skillet
  • 2
    Dice jalepeno discarding seeds and membranes
  • 3
    Add to beef with, onions, garlic and green pepper
  • 4
    Husk tomatillos, wash and chop, add to beef mixture. Add tomato sauce, beef broth and seasonings; bring to a boil
  • 5
    Reduce heat and simmer for about 2 hours or until beef is tender.

    You can use habanero chili peppers, if you want hotter chili. Great served with cornbread or Jalpeno cornbread
