this is my tweaked adaptation of a similar recipe that was featured on all recipes..
Adjust the curry powder to your liking. 1 tbsp was enough "heat" for us!!

Ingredients

  • 1 lb
    ground beef
  • 1/2
    onion, chopped
  • 15 oz can(s)
    mixed vegetables, well drained
  • 1 Tbsp
    minced garlic
  • 1 Tbsp
    curry powder
  • 1/2 c
    beef stock
  • 3 pkg
    athens mini fillo shells, thawed

How to Make Curried Beef Vegetable Bites

Step-by-Step

  1. Add beef, onion, garlic and salt to taste to skillet on medium heat. Cook until ground beef is browned. Add vegetables, curry powder and beef stock. Mix well and cook til stock has mostly evaporated. Add a spoonful of filling to each shell. Serve immediately.
  2. I didn't heat my shells, if you are wanting a more crispy shell, follow directions on box for unfilled crispy shell.
  3. This would also make a great appetizer.
