curried beef vegetable bites
this is my tweaked adaptation of a similar recipe that was featured on all recipes.. Adjust the curry powder to your liking. 1 tbsp was enough "heat" for us!!

Ingredients
- 1 pound ground beef
- 1/2 - onion, chopped
- 15 oz cans mixed vegetables, well drained
- 1 tablespoon minced garlic
- 1 tablespoon curry powder
- 1/2 cup beef stock
- 3 packages athens mini fillo shells, thawed
How To Make curried beef vegetable bites

Step 1Add beef, onion, garlic and salt to taste to skillet on medium heat. Cook until ground beef is browned. Add vegetables, curry powder and beef stock. Mix well and cook til stock has mostly evaporated. Add a spoonful of filling to each shell. Serve immediately.

Step 2I didn't heat my shells, if you are wanting a more crispy shell, follow directions on box for unfilled crispy shell.

Step 3This would also make a great appetizer.
