Ingredients

1 lbground beef
-
1 Tbspolive oil

1 smallonion, chopped

1/2green bell pepper, chopped

1 can(s)15 oz chili beans drained (not rinsed)

1 can(s)10 oz rotel medium tomatoes

1 tspchili powder
-
1/2 tspsalt
-
1/2 tspground cumin
-
1/4 tsppepper

1/4 tspgarlic powder
-
8 ozpackage, mexican blend cheese
-
8flour tortillas
-
1 can(s)10 oz mild red enchilada sauce

·sour cream, to taste (optional)
How to Make Crockpot Enchiladas
- Cook ground beef over medium heat, drain and set aside.
- Saute onion and bell pepper in oil until tender. Add to ground beef and mix well.
- Stir into the beef mixture the beans, tomatoes, chili powder, salt, pepper,cumin and garlic powder. Mix well.
- In crockpot, place two tortillas on bottom, then add 1/4 of beef mixture, then 1/4 of cheese. Repeat this order three more times. Pour enchilada sauce over all, cover and cook on low for 2 1/2 hours. I topped mine with some sour cream, which added to the taste.
