crockpot chili bean casserole
My daughter Laurie brought this dish to my house as a side dish for a cookout one summer stating she just threw it together! She did not use a crockpot but used a soup pot on the stove.She impressed me with her creativeness and I think of her everytime I make this. It is delicious and now I'm sharing it with you.You can be creative as well and substitute the type of meat or beans. Serve with chips, sour cream or top with cheese.The possibilities are endless!

Slow Cooker Crock Pot

Ingredients
- 1 pound ground beef
- 1 package turkey(or beef) polish kielbasa, 13oz
- 1 medium onion,chopped
- 1 - green pepper, chopped
- 1 - red pepper, chopped
- 3 cloves garlic, chopped
- 1 package chili seasoning mix (1 oz)
- 1 can white beans
- 1 can blackeye beans
- 1 can kidney beans
- 1 can baked beans,chipolte flavored or any flavor preferred,with liquid
- 1 can crushed tomatoes (28 oz)
- 1 tablespoon hot pepper sauce or crushed red peppers, any kind (optional)
How To Make crockpot chili bean casserole

Step 1Place tomato sauce, chili seasoning,drained beans(except for the baked beans as you need to add the whole can,liquid included) and hot pepper sauce in the crockpot on high.Saute ground beef,vegetable and garlic,adding a little salt/pepper. Cut kielbasa into small cubes or round and add to saute pan.Once the vegetables begin to soften and meat is no longer pink (don't overcook), add to the crockpot.

Step 2reduce the heat to medium and cook about 3-4 hours. If your crockpot gets really hot quickly then place on low as everything is really already cooked! If preferred, you could add a can of corn or some frozen corn when adding the beans.
