Ingredients

  • 2.25 pounds beef brisket
  • 1 tablespoon vegetable oil
  • 3/4 cup red wine
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon thyme
  • 1/4 teaspoon rosemary
  • 1/2 teaspoon salt
  • 3 - minced garlic cloves
  • 1 - bay leaf , crushed
  • 3 - carrots, into 2 inch chunks
  • 5 small red potatoes, halved
  • 1 - onion, quartered
  • 2 tablespoons quick cooking tapioca
  • 1/4 cup water

How To Make crockpot brisket

  • Step 1
    Trim fat from brisket.
  • Step 2
    Heat oil in a large frying pan.
  • Step 3
    Over medium-high until hot, brown brisket on all sides.
  • Step 4
    Place carrots, onion and potatoes in crockpot.
  • Step 5
    Sprinkle tapioca over top of vegetables.
  • Step 6
    Add browned brisket.
  • Step 7
    Combine wine and remaining ingredients.
  • Step 8
    Pour over top of brisket.
  • Step 9
    Cover with lid and cook on high for 4 1/2 to 5 hours or on low for 8 hours.
  • Step 10
    The tapioca will thicken the liquid to make its own gravy.
