Ingredients
- 2.25 pounds beef brisket
- 1 tablespoon vegetable oil
- 3/4 cup red wine
- 1 tablespoon dijon mustard
- 1/2 teaspoon thyme
- 1/4 teaspoon rosemary
- 1/2 teaspoon salt
- 3 - minced garlic cloves
- 1 - bay leaf , crushed
- 3 - carrots, into 2 inch chunks
- 5 small red potatoes, halved
- 1 - onion, quartered
- 2 tablespoons quick cooking tapioca
- 1/4 cup water
How To Make crockpot brisket

Step 1Trim fat from brisket.

Step 2Heat oil in a large frying pan.

Step 3Over medium-high until hot, brown brisket on all sides.

Step 4Place carrots, onion and potatoes in crockpot.

Step 5Sprinkle tapioca over top of vegetables.

Step 6Add browned brisket.

Step 7Combine wine and remaining ingredients.

Step 8Pour over top of brisket.

Step 9Cover with lid and cook on high for 4 1/2 to 5 hours or on low for 8 hours.

Step 10The tapioca will thicken the liquid to make its own gravy.
