Very easy, savory stew. Throw it together in the morning, and by afternoon you have a hearty, hot meal in a bowl. Fresh potatoes and carrots can be used in place of the canned/bagged veggies I use.

A simple slow cooker beef stew recipe where no peeling potatoes and carrots is required. That's a win for us! The meat is tender and cooks to perfection. Most beef stew recipes have potatoes and mushrooms, but button mushrooms are a nice surprise in this recipe. Once it slow cooks, the gravy is nice and thick without the work. An easy weeknight dinner.

Ingredients
- 1 - envelope McCormick beef stew seasoning mix
- 2 pounds stew meat, cut into small pieces
- 2 jars brown gravy, 18 oz. each
- 2 jars Green Giant whole mushrooms, 6 oz. each
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound baby carrots
- 3-4 cans new potatoes, 14.5 oz each
- 1 large onion, cut into large chunks
- salt and pepper, to taste
How To Make crock pot beef stew

Step 1In a medium skillet, over medium-high heat, brown stew meat. I sprinkle a little of the seasoning mix onto the meat, just enough to cover in a light layer. Save the rest of the seasoning for later. Drain.

Step 2In a 5 or 6-quart Crock Pot, combine the remaining ingredients.

Step 3Add stew meat and stir ingredients together.

Step 4Cover. Cook on low setting for 6 - 7 hours, or until meat and veggies are tender. Stir occasionally.
