These are soooo easy to make, and taste so good at the end of a long day. The meat almost falls apart. You can also use boneless chicken breasts, cut in strips.

Ingredients

  • 1 pound beef skirt steak, cut across the grain into 4" strips
  • 2 - bell peppers (any color), sliced lengthwise 1/2" thick
  • 1 large onion, sliced lengthwise
  • 1 tablespoon lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon beef bouillon granules (or 1/2 of a bouillon cube)
  • 1/2 cup hot water

How To Make crockpot beef fajitas

  • Step 1
    Place beef in crockpot; top with bell peppers and onions. Sprinkle with lime juice.
  • Step 2
    Combine chili powder, cumin, beef bouillon granules and water; pour over meat and vegetables.
  • Step 3
    Cook on LOW for 6-7 hours or until tender.
  • Step 4
    Serve with: flour tortillas, guacamole, sour cream, salsa - whatever you like. We eat ours with Spanish Rice, too.
