crock pot zesty beef & noodles

I was looking for something interesting to make with some stew meat that I needed to use. I just searched my pantry for things I had on hand that might taste good together - you know how it is when you're running low on supplies but still have to put dinner on the table! Here's the result and I think it's a winner!

Ingredients
- 1 large onion, sliced thin (i used a mandolin)
- 2 pounds stew meat or beef tips
- 1 tablespoon italian seasoning (or use 1 tsp each oregano, basil & rosemary)
- 1 teaspoon thyme, dried
- 1 teaspoon cayenne pepper
- 1 can cream of mushroom soup
- 1 can french onion soup
- 1 can mushroom pieces, 11oz., undrained
- 1 can fire-roasted tomatoes, diced, 15 oz., undrained
- 1 cup dry red wine (i used merlot)
- - salt and pepper, to taste
- 12 ounces egg noodles

Step 1Spray crock pot with cooking spray.

Step 2Place all ingredients, except egg noodles, in crock pot in order listed. Cook on low for 7 hours.

Step 3Half an hour before the end of the cooking time, stir ingredients to blend. Stir in the egg noodles and ensure they are covered with liquid. Add beef broth or water, if needed and adjust salt and pepper accordingly. Cook on low for 30 minutes. Plate and enjoy!

Step 4NOTE: For those of you who do not cook with wine, you can substitute 1/2 -3/4 cup beef broth and 2 - 3 Tbsp each of lemon juice and balsamic vinegar.
