Crock Pot Zesty Beef & Noodles

Ingredients

1 largeonion, sliced thin (i used a mandolin)

2 lbstew meat or beef tips

1 Tbspitalian seasoning (or use 1 tsp each oregano, basil & rosemary)

1 tspthyme, dried

1 tspcayenne pepper
-
1 can(s)cream of mushroom soup
-
1 can(s)french onion soup
-
1 can(s)mushroom pieces, 11oz., undrained

1 can(s)fire-roasted tomatoes, diced, 15 oz., undrained
-
1 cdry red wine (i used merlot)

·salt and pepper, to taste

12 ozegg noodles

How to Make Crock Pot Zesty Beef & Noodles
- Spray crock pot with cooking spray.
- Place all ingredients, except egg noodles, in crock pot in order listed. Cook on low for 7 hours.
- Half an hour before the end of the cooking time, stir ingredients to blend. Stir in the egg noodles and ensure they are covered with liquid. Add beef broth or water, if needed and adjust salt and pepper accordingly. Cook on low for 30 minutes. Plate and enjoy!
- NOTE: For those of you who do not cook with wine, you can substitute 1/2 -3/4 cup beef broth and 2 - 3 Tbsp each of lemon juice and balsamic vinegar.
