Crock Pot Zesty Beef & Noodles

Diane Whitbeck

I was looking for something interesting to make with some stew meat that I needed to use. I just searched my pantry for things I had on hand that might taste good together - you know how it is when you're running low on supplies but still have to put dinner on the table! Here's the result and I think it's a winner!

1 large
onion, sliced thin (i used a mandolin)
2 lb
stew meat or beef tips
1 Tbsp
italian seasoning (or use 1 tsp each oregano, basil & rosemary)
1 tsp
thyme, dried
1 tsp
cayenne pepper
1 can(s)
cream of mushroom soup
1 can(s)
french onion soup
1 can(s)
mushroom pieces, 11oz., undrained
1 can(s)
fire-roasted tomatoes, diced, 15 oz., undrained
1 c
dry red wine (i used merlot)
salt and pepper, to taste
12 oz
egg noodles
cooking spray

1Spray crock pot with cooking spray.
2Place all ingredients, except egg noodles, in crock pot in order listed. Cook on low for 7 hours.
3Half an hour before the end of the cooking time, stir ingredients to blend. Stir in the egg noodles and ensure they are covered with liquid. Add beef broth or water, if needed and adjust salt and pepper accordingly. Cook on low for 30 minutes. Plate and enjoy!
4NOTE: For those of you who do not cook with wine, you can substitute 1/2 -3/4 cup beef broth and 2 - 3 Tbsp each of lemon juice and balsamic vinegar.
