crock pot/slow-cooker yankee bean pot

An updated version of an old-fashioned American favorite, taking advantage of the gentle, uniform heat of a slow-cooker. Instead of the traditional salt pork, this recipe uses either lean Canadian-style bacon or regualr bacon. This is almost like baked-beans, but has meat in it, so it can be used as the main meal.

Ingredients

  • 1 pound navy beans or great northern beans, dried
  • 1 teaspoon canola oil
  • 2 large onions, chopped
  • 12 ounces canadian bacon or 12 oz. regular bacon
  • 6 cloves garlic, minced
  • 1 teaspoon thyme, dried
  • 1 pinch crushed red pepper
  • 12 ounces pure maple syrup (not pancake syrup!)
  • 1/4 cup ketchup
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon dry mustard
  • 4 - ham hocks, smoked (can be labeled as knuckles too)
  • 3 cups boiling water
  • 2 - bay leaves
  • 2 tablespoons apple cider vinegar
  • - tabasco, to taste
  • 1/4 teaspoon salt
  • - pepper, to taste
  • OPTIONAL MEAT (CHOPPED INTO BITE-SIZED PIECES):
  • 2 packages hot dogs, uncooked (i used hebrew national)
  • 1 pound smoked sausage, uncooked
  • 1 pound andouille sausage, uncooked
  • - or whatever else you can think of

How To Make crock pot/slow-cooker yankee bean pot

  • Step 1
    TIP: Start soaking beans a day ahead! OPTION #1: Place beans in a large bowl & cover with cold water. Let soak 8 hours or overnight. OPTION #2: Place beans & 2 qts water in a large pot. Bring to boil for 2 minutes. Remove from the heat & let stand for 1 hour.

    Drain & rinse beans. Place in crock pot.
  • Step 3
    Heat oil in a large non-stick skillet over med-high heat. Add onions & bacon; cook, stirring often, until onions are softened & light golden, about 5-8 minutes. Add garlic, thyme & crushed red pepper; cook, stirring, for 1 minute more. Add to the beans.
  • Step 4
    Add maple syrup, ketchup, worcestershire & mustard to the beans; stir to combine. Bury the ham hocks in the beans.
  • Step 5
    Add meat, if using, & stir. If not, add boiling water & top with bay leaves.
  • Step 6
    Cover & cook until the beans are tender, about 4 1/4 hours on high or about 11 hours on low. Remove the bay leaves & ham hocks. Season with vinegar, tabasco, salt & pepper. Serve hot. SAVE THE HAM HOCKS! Let them cool & give them to your dog as a treat! Mine just loves them & yes it'll be totally gone!

    NOTE: Reynolds makes "Slow Cooker Liners". I use them every time making anything in my Crock Pot. When done & empty...all you do is throw the liner away with no or little clean up. THESE ARE THE BEST!
