I’ve been trying for years to replicate my late beloved mom’s pot roast in flavor, but in a Crock Pot. I’ve got the cooking down, but the flavor was just a little different from what I remember. You know? This is my closest version so far. When it comes to spices and seasonings, experiment with the flavors your family will enjoy, or surprise them a little. Play around with the liquid, like adding wine in place of some of the stock. Add some potatoes a few hours before the meat is done. Your Kitchen = Your Rules. =^..^=

Ingredients

  • 3-5 pounds chuck roast
  • some salt and pepper
  • 2 tablespoons cooking oil
  • 1 - 2 pounds peeled and chunked carrots or use baby carrots
  • 2 - 3 peeled & chunked onions
  • 32 ounces beef stock or liquid of choice
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning or seasonings of choice

How To Make crock pot pot roast

  • Browned chuck roast
    Step 1
    Start heating up the crockpot on HIGH. Heat a heavy duty or cast iron skillet on medium-high heat while adding salt and pepper to both sides of a chuck roast. Put the cooking oil in the hot skillet and heat it up. Brown the beef on all sides and edges, then set aside for now.
  • Veggies with some beef stock
    Step 2
    Add the prepared carrots and onions to the skillet and stir around for a minute or so. Then, pour in about a cup of the stock and stir around the vegetables for another few minutes, scraping up any browned meat bits from the bottom of the skillet.

    Pour the contents of the skillet into the warmed Crock Pot. Stir in the rest of the beef stock, minced garlic, and Italian seasoning.
  • Crockpot is ready to go
    Step 4
    Finally, top the vegetables with the browned roast. Cook on HIGH for 5-6 hours, depending on the size of your roast. Check early in case your crockpot runs hotter. The carrots should be cooked through (or however you like them), and the meat should come apart easily into chunks when done. You can also turn the heat to LOW and cook for 8-10 hours.
