Ingredients

  • 8 ounces lasagna noodles
  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 - minced garlic clove
  • 1 can cream of mushroom soup
  • 1 can mushrooms, stems and pieces
  • 1 pound frozen spinach, thawed and squeezed dry
  • 24 ounces cottage cheese
  • 3 - eggs
  • 1 package soft chive cream cheese
  • 2.75 ounces french fried onions

How To Make creamy spinach and beef layered casserole

  • Step 1
    Grease 13 x 9 inch baking dish.
  • Step 2
    Cook noodles to desired doneness as directed and drain.
  • Step 3
    In medium skillet, cook, ground beef, onions, and garlic over medium-high heat until beef is browned; drain if needed.
  • Step 4
    Add soup and mushroooms; mix well.
  • Step 5
    In large bowl, combine spinach, 2 cups cottage cheese and 2 eggs; mix well.
  • Step 6
    In another large bowl, combine cooked noodles remaining 1 cup cottage cheese and remaining egg, toss gently.
  • Step 7
    In greased dish layer half of the noodle mixture, spinach and beef mixture, repeat layering.
  • Step 8
    Cover with foil and bake 35 - 40 minutes in a 350 degree oven.
  • Step 9
    Remove from oven and sprinkle fried onions over top.
  • Step 10
    Return to oven cook additional 5 minutes.
  • Step 11
    Let stand 5 minutes before serving.
