Ingredients
- 8 ounces lasagna noodles
- 1 pound ground beef
- 1 cup chopped onion
- 1 - minced garlic clove
- 1 can cream of mushroom soup
- 1 can mushrooms, stems and pieces
- 1 pound frozen spinach, thawed and squeezed dry
- 24 ounces cottage cheese
- 3 - eggs
- 1 package soft chive cream cheese
- 2.75 ounces french fried onions
How To Make creamy spinach and beef layered casserole

Step 1Grease 13 x 9 inch baking dish.

Step 2Cook noodles to desired doneness as directed and drain.

Step 3In medium skillet, cook, ground beef, onions, and garlic over medium-high heat until beef is browned; drain if needed.

Step 4Add soup and mushroooms; mix well.

Step 5In large bowl, combine spinach, 2 cups cottage cheese and 2 eggs; mix well.

Step 6In another large bowl, combine cooked noodles remaining 1 cup cottage cheese and remaining egg, toss gently.

Step 7In greased dish layer half of the noodle mixture, spinach and beef mixture, repeat layering.

Step 8Cover with foil and bake 35 - 40 minutes in a 350 degree oven.

Step 9Remove from oven and sprinkle fried onions over top.

Step 10Return to oven cook additional 5 minutes.

Step 11Let stand 5 minutes before serving.
