Creamy Meatball Dinner

1/2 c
soft whole wheat bread crumbs
egg, beaten
2 Tbsp
1 Tbsp
chopped onion
1/4 tsp
3/4 lb
ground beef
1 can(s)
cream of mushroom soup
1/2 c
apple juice
2 Tbsp
snipped fresh parsley
1/2 tsp
dried basil
2 c
carrots, frozen crinkle cut
2 Tbsp
butter, melted
1/2 c
cooked brown rice


1Combine crumbs, egg, milk, onion and salt.
2Add beef; mix well.
3Shape mixture into 20 meatballs; place in 15 x 10 x 1" pan.
4Bake, uncovered, in 375 degree oven 15 minutes.
5Drain and cool.
6Combine soup, apple juice, parsley and basil; add meatballs and stir to coat.
7Divide rice among 4 shallow single-serving baking dishes.
8Top with 5 meatballs and some sauce.
9Place carrots at one end of dish; drizzle with butter.
10Cover with moisture and vapor-proof wrap; freeze.
11To serve, bake, uncovered, in a 375 degree oven about 1 1/4 hours, or cook, covered, on 70 % power (medium high) 10 to 12 minutes in the microwave, turning once.
