I made this recipe from stuff in the pantry and fridge when my son-in-law showed up with our grandkids unexpectedly. It was a big hit, and now I make it whenever they come over. I've made it for others, and everybody loves it.

Ingredients

  • 2 pounds beef stew meat
  • 1 can cheddar cheese soup
  • 1 can fiesta nacho cheese soup
  • 1 can cream of celery soup
  • 1 can beef bullion
  • 1 large onion chopped (or bag of frozen chopped onion)
  • 1 jar pimientos (large)
  • 2 cups shredded cheddar cheese
  • 2 boxes thin spaghetti

How To Make cowboy spaghetti

  • Step 1
    Preheat oven to 350.
  • Step 2
    On stove, very slowly cook stew meat with onions. Drain most of the grease.
  • Step 3
    Meanwhile, in large bowl, mix well all other ingredients except the spaghetti.
  • Step 4
    Cook the spaghetti according to the package, but on the al dente side (so it can absorb the other stuff as it bakes). Drain.
  • Step 5
    Combine all ingredients together and bake for one hour at 350 degrees.
