For my daughter's fourth grade field trip we went to a 100 year old pueblo and i was helping in the kitchen. They made this for the kids and adults everyone loved it.I'm still cooking it years later. So simple and delish.

beef rump roast
3 c
medium salsa

yellow pepper
1 tsp
salt
1-30oz jar(s)
nopalitos(cactus in a jar)

How to Make Cowboy Ranchero Beef

Step-by-Step

  • 1Cut into 1 1/2 inch cubes, or any beef that is pre-cut will work. Cook till just browned. Rinse nopalitos in colander.
  • 2Add salsa and nopalitos mix until combined. Add yellow pepper and cover for about 45 minutes on low heat stirring occasionally.
  • 3Check to make sure its fork tender and enjoy with rice, beans and tortillas.
