For my daughter's fourth grade field trip we went to a 100 year old pueblo and i was helping in the kitchen. They made this for the kids and adults everyone loved it.I'm still cooking it years later. So simple and delish.

Ingredients
- 2 pounds beef rump roast
- 3 cups medium salsa
- 1 - yellow pepper
- 1 teaspoon salt
- 1-30oz jar nopalitos(cactus in a jar)
How To Make cowboy ranchero beef

Step 1Cut into 1 1/2 inch cubes, or any beef that is pre-cut will work. Cook till just browned. Rinse nopalitos in colander.

Step 2Add salsa and nopalitos mix until combined. Add yellow pepper and cover for about 45 minutes on low heat stirring occasionally.

Step 3Check to make sure its fork tender and enjoy with rice, beans and tortillas.
