Ingredients
- 1.5 pounds ground beef
- 1 large onion, finely chopped
- 1 teaspoon garlic clove, minced
- 1 teaspoon seasoned salt
- 1 package chili seasoning mix
- 1 pound canned tomatoes, undrained and chopped
- 1.5 cups whole kernel corn, cooked
- 3.25 ounces black olives, pitted and drained
- 1 cup yellow cornmeal
- 1 teaspoon salt
- 2.5 cups cold water
- 1/4 cup pimento, chopped
- 1 cup cheddar cheese, shredded

Step 1Brown ground beef in skillet, breaking up meat with fork.

Step 2Add seasonings and tomatoes; simmer 5 minutes.

Step 3Stir in corn and olives.

Step 4Combine cornmeal, salt and water; cook, stirring, until thick.

Step 5Add pimento.

Step 6Line greased, shallow 2-quart baking dish with part of cornmeal mush.

Step 7Pour in beef mixture and make a border of remaining mush around edge of baking dish.

Step 8Bake at 350 about 40 minutes.

Step 9Sprinkle with remaining cheese and bake 5 minutes longer.
