We eat it with cornbread and we can usually get 2 dinners out of it. Makes for a GREAT, quick weeknight meal in one pan!

Ingredients

  • 1 pound ground beef
  • 1/2 cup rice, instant and uncooked
  • 1 can (14 ounce) whole kernel corn, undrained
  • 1 can (14 ounce) stewed tomatos, undrained
  • 1 can (14 ounce) tomato with chiles, undrained
  • 1 can (8 ounce) tomato sauce
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1/2 cup shredded cheese (your choice)

How To Make cowboy hash

  • Step 1
    Brown the ground beef in a LARGE skillet.
  • Step 2
    Add rice, uncooked. Let it brown a little bit in the drippings. 1-2 minutes tops.
  • Step 3
    Add the rest of the ingredients EXCEPT the cheese, and cook for 15-20 minutes covered or until the rice is done, stirring occasionally.
  • Step 4
    During the last 5 minutes or so, sprinkle the cheese on top and put the lid back on until the cheese melts.
  • Step 5
    Serve casserole style with cornbread!
