I'm always looking for a tasty recipe that will "feed the multitudes". We really like this one.

Ingredients

  • 1 pound ground beef (or turkey)
  • 1 can chopped green chilis
  • 1 package taco seasoning
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 1 - chopped onion
  • 1 - chopped and seeded bell pepper
  • 1 can ro-tel tomatoes
  • 1 can pinto beans (do not drain)
  • 1 cup cooked rice
  • 1 cup beef broth
  • 3/4 can shredded cheddar cheese

How To Make cowboy casserole

  • Step 1
    Preheat oven to 350 degrees. grease a 2-quart casserole dish (preferable glass)
  • Step 2
    Brown meat until crumbly. Drain excess fat
  • Step 3
    Add garlic, salt, onion, bell pepper, chili powder, green chilies and taco seasoning. Saute for 5 minutes until vegetables are limp.
  • Step 4
    Mix in tomatoes, beans (and juice) and rice. Stir together and pour into casserole dish. Pour broth over the top and bake uncovered for 45 minutes.
  • Step 5
    Top with cheese and bake additional 15 minutes. Serve
