I'm always looking for a tasty recipe that will "feed the multitudes". We really like this one.

Ingredients

1 lb
ground beef (or turkey)
1 can(s)
chopped green chilis
1 pkg
taco seasoning
1 tsp
chopped garlic
1/2 tsp
salt
1 tsp
chili powder
1
chopped onion
1
chopped and seeded bell pepper
1 can(s)
ro-tel tomatoes
1 can(s)
pinto beans (do not drain)
1 c
cooked rice
1 c
beef broth
3/4 can(s)
shredded cheddar cheese

How to Make Cowboy Casserole

Step-by-Step

  • 1Preheat oven to 350 degrees. grease a 2-quart casserole dish (preferable glass)
  • 2Brown meat until crumbly. Drain excess fat
  • 3Add garlic, salt, onion, bell pepper, chili powder, green chilies and taco seasoning. Saute for 5 minutes until vegetables are limp.
  • 4Mix in tomatoes, beans (and juice) and rice. Stir together and pour into casserole dish. Pour broth over the top and bake uncovered for 45 minutes.
  • 5Top with cheese and bake additional 15 minutes. Serve
