Ingredients

  • 1 lb
    ground beef (or turkey)
  • 1 can(s)
    chopped green chilis
  • 1 pkg
    taco seasoning
  • 1 tsp
    chopped garlic
  • 1/2 tsp
    salt
  • 1 tsp
    chili powder
  • 1
    chopped onion
  • 1
    chopped and seeded bell pepper
  • 1 can(s)
    ro-tel tomatoes
  • 1 can(s)
    pinto beans (do not drain)
  • 1 c
    cooked rice
  • 1 c
    beef broth
  • 3/4 can(s)
    shredded cheddar cheese

How to Make Cowboy Casserole

Step-by-Step

  1. Preheat oven to 350 degrees. grease a 2-quart casserole dish (preferable glass)
  2. Brown meat until crumbly. Drain excess fat
  3. Add garlic, salt, onion, bell pepper, chili powder, green chilies and taco seasoning. Saute for 5 minutes until vegetables are limp.
  4. Mix in tomatoes, beans (and juice) and rice. Stir together and pour into casserole dish. Pour broth over the top and bake uncovered for 45 minutes.
  5. Top with cheese and bake additional 15 minutes. Serve
