Ingredients
- 1 pound ground beef (or turkey)
- 1 can chopped green chilis
- 1 package taco seasoning
- 1 teaspoon chopped garlic
- 1/2 teaspoon salt
- 1 teaspoon chili powder
- 1 - chopped onion
- 1 - chopped and seeded bell pepper
- 1 can ro-tel tomatoes
- 1 can pinto beans (do not drain)
- 1 cup cooked rice
- 1 cup beef broth
- 3/4 can shredded cheddar cheese
How To Make cowboy casserole

Step 1Preheat oven to 350 degrees. grease a 2-quart casserole dish (preferable glass)

Step 2Brown meat until crumbly. Drain excess fat

Step 3Add garlic, salt, onion, bell pepper, chili powder, green chilies and taco seasoning. Saute for 5 minutes until vegetables are limp.

Step 4Mix in tomatoes, beans (and juice) and rice. Stir together and pour into casserole dish. Pour broth over the top and bake uncovered for 45 minutes.

Step 5Top with cheese and bake additional 15 minutes. Serve
