Ingredients
- 1 1/2 pounds ground beef
- 4 tablespoons canola oil, divided use
- 2 stalks celery, chopped
- 1 small green bell pepper, chopped
- 3/4 cup onion, chopped
- 1 cup uncooked rice
- 1 can (28 oz) diced tomatoes
- 2 teaspoons salt
- 2 teaspoons chili powder
- 1/2 teaspoon black pepper
- 1 teaspoon worcestershire sauce
- tabasco sauce, to taste
- 1 cup large black olives, chopped (divided use)
- 8 ounces jack or pepper jack cheese, sliced
How To Make cowboy casserole - no beans!

Step 1Preheat oven to 325F.

Step 2Heat 2 tablespoons of the oil in a skillet and brown the ground beef. Drain. Place browned beef in a 2 quart casserole.

Step 3Add remaining 2 tablespoons oil to the same skillet. Add the celery, green pepper, onion and rice to the skillet. Cook until the rice is browned, stirring constantly to avoid burning.

Step 4Add the undrained tomatoes, salt, chili powder, pepper, Worcestershire sauce, and half the olives. Add Tabasco to your taste. Mix well and bring to a boil. Pour over the ground beef in the casserole dish.

Step 5Cover dish tightly with foil and bake for 1 hour. Layer the remaining olives and cheese over the top and broil for 5 minutes or until the cheese is bubbly.

Step 6Optional serving suggestion: Top with sour cream, cilantro, and green onions.
