You can make this as spicy as you like. Using pepper jack instead of jack cheese adds another layer of flavor.

Ingredients

  • 1 1/2 pounds ground beef
  • 4 tablespoons canola oil, divided use
  • 2 stalks celery, chopped
  • 1 small green bell pepper, chopped
  • 3/4 cup onion, chopped
  • 1 cup uncooked rice
  • 1 can (28 oz) diced tomatoes
  • 2 teaspoons salt
  • 2 teaspoons chili powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon worcestershire sauce
  • tabasco sauce, to taste
  • 1 cup large black olives, chopped (divided use)
  • 8 ounces jack or pepper jack cheese, sliced

How To Make cowboy casserole - no beans!

  • Step 1
    Preheat oven to 325F.
  • Step 2
    Heat 2 tablespoons of the oil in a skillet and brown the ground beef. Drain. Place browned beef in a 2 quart casserole.
  • Step 3
    Add remaining 2 tablespoons oil to the same skillet. Add the celery, green pepper, onion and rice to the skillet. Cook until the rice is browned, stirring constantly to avoid burning.
  • Step 4
    Add the undrained tomatoes, salt, chili powder, pepper, Worcestershire sauce, and half the olives. Add Tabasco to your taste. Mix well and bring to a boil. Pour over the ground beef in the casserole dish.
  • Step 5
    Cover dish tightly with foil and bake for 1 hour. Layer the remaining olives and cheese over the top and broil for 5 minutes or until the cheese is bubbly.
  • Step 6
    Optional serving suggestion: Top with sour cream, cilantro, and green onions.
