I found this receipe a couple of years ago. As a foster parent of 2 teenagers I never knew how many mouths I was going to feed. This is quick and filling and everybody loves it. I do often buy a large quanity of ground beef and before I freeze it I will chop 1 onion and cook the ground beef and onion. This cuts down a step in the process. This can also be frozen. To freeze leave off the shredded cheese.

Ingredients

  • 1 pound ground beef
  • 2 cans whole kernel corn drained
  • 1 cup shredded cheddar cheese
  • 2/3 cup milk
  • 4 tablespoons sour cream
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 cups frozen tator tots
  • 1 can cream of chicken condensed soup

How To Make cowboy casserole

  • Step 1
    Brown ground beef and chopped onion until done. Stir in the corn, soup, 1 /2 cup cheese, milk, sour cream, onion powder, and pepper.
  • Step 2
    Place 1 cup of tator tots in bottom of a 3 cup baking dish that has been sprayed with Pam or a cooking spray. Layer with beef mixture and remaining Tator Tots. Sprinkle with the remaining cheese.
  • Step 3
    Bake uncovered at 375 degrees for 25 to 30 minutes or until bubbly.
