Ingredients
- 2 pounds ground beef or turkey
- 1 package cooked & crumbled bacon
- 3/4 cup shredded sharp cheddar cheese
- 3/4 cup shredded pepper jack cheese
- 1 can green chiles, drained
- 1/2 cup french fried onions
- 1 teaspoon black pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/2 cup italian bread crumbs
- 1/2 cup instant potato flakes, dry
- 1 cup cooked rice
- 1/3 cup bbq sauce
- 1 tablespoon prepared mustard
- 1 - egg
- 6-8 - large bell peppers
How To Make cowboy burger stuffed peppers

Step 1Slice tops off peppers, set aside. Remove seeds from peppers & set aside.

Step 2Combine all other ingredients in a large bowl. Get in there with your hands and mix till evenly distributed.

Step 3Fill peppers to top with the meat mixture. Place tops of peppers back on. Wrap each pepper with aluminum foil.

Step 4To cook peppers you can either place the wrapped peppers on a hot grill for approximately 30 minutes, turning every few minutes or so till done; OR, and this is my preferred way, you can place the wrapped peppers directly on the coals in the grill or the campfire for about 15-20 minutes, turning (carefully) every couple minutes. Take a thermometer to the middle of the meat to ensure a temperature of at least 160 degrees F.

Step 5Remove peppers from grill/coals. Let sit wrapped for about 10 minutes, then unwrap & enjoy! Serve with some bbq sauce & pickle spears.
