country meatball ragout

A wonderful meatball stew that's great on those cold winter evenings.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/3 cup bread crumbs
  • 1 - egg, beaten
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1 can cream of chicken soup with herbs
  • 1 can beef broth. don't use chicken broth or it won't taste right
  • 1 package frozen veggies, i use broccoli, cauliflower and carrots
  • 1 can chopped tomatoes
  • 1/2 teaspoon each basil and thyme
  • 2 tablespoons oil
  • 1/2 cup water
  • 1/4 cup flour

How To Make country meatball ragout

  • Step 1
    Mix beef, bread crumbs, egg, onion and salt. Shape into meatballs
  • Step 2
    In large skillet brown meatballs in oil. Pour off fat.
  • Step 3
    Add remaining ingredients EXCEPT water and flour and bring to a boil. Reduce heat and simmer 20 minutes, stirring occasionally
  • Step 4
    Gradually blend water into flour until smooth. Slowly stir into stew. Cook, stirring until thickened. Serve.
