Ingredients

  • - ..meatloaf..
  • 1 1/2 pounds lean ground beef
  • 1/2 cup ketchup
  • 1/3 cup tomato juice
  • 1/2 teaspoon salt&pepper (each)
  • 1/8 teaspoon crushed red pepper
  • 2 - eggs, beaten
  • 3/4 cup fresh bread crumbs
  • 1/4 cup finely chopped onions
  • 2 teaspoons mustard
  • - aluminum foil (to line pan)
  • - ..topping..
  • 1/4 cup ketchup
  • 1/2 cup mustard
  • 2 teaspoons brown sugar
  • - fresh herb for garnish (optional)

How To Make cottage meatloaf

  • Step 1
    preheat oven to 400 degrees.
  • Step 2
    in a large bowl, combine ketchup, tomato juice, salt, pepper, red pepper, eggs, onions and mustard. Mix until throughly blended.
  • Step 3
    Mix bread crumbs and ground beef.
  • Step 4
    Add beef to liquid mixture, mix gently, but throughly.
  • Step 5
    line a 9x5 inch loaf pan with aluminum foil. press meat mixture into pan.
  • Step 6
    Mix topping ingredients together in separate bowl; spread on top of meat.
  • Step 7
    Bake at 400 degrees for about 35-40 minutes.
  • Step 8
    Drain off fat and allow to sit 5 minutes before serving. Garnish with fresh herbs, if desired.
