Ingredients

  • 1 1/2 pounds lean ground beef
  • 1/2 cup tomato ketchup
  • 1/3 cup tomato juice
  • 1/2 teaspoon each salt and black pepper
  • 1/8 teaspoon red pepper
  • 2 - eggs, beaten
  • 3/4 cup fresh bread crumbs
  • 1/4 cup finely chopped onions
  • 2 teaspoons prepared mustard
  • TOPPING
  • 1/4 cup tomato ketchup
  • 1/2 teaspoon prepared mustard
  • 2 teaspoons brown sugar

How To Make cottage meat loaf (microwave version)

  • Step 1
    In a large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard. Mix until thoroughly blended.
  • Step 2
    Add ground beef. Mix gently but thoroughly.
  • Step 3
    On microsafe baking dish, form meat mixture into a 9-inch ring. Cover with waxed paper.
  • Step 4
    Microwave at HIGH power for 5 minutes. Pour off any juices.
  • Step 5
    Microwave, covered, at MEDIUM power for about 10 minutes.
  • Step 6
    Remove waxed paper. Spread top of meat loaf with the topping mixture.
  • Step 7
    Microwave, uncovered, at HIGH power for about 5 minutes longer or until meat loaf is done.
  • Step 8
    Serve with noodles or rice and a green salad.
