Ingredients
- 1 1/2 pounds lean ground beef
- 1/2 cup tomato ketchup
- 1/3 cup tomato juice
- 1/2 teaspoon each salt and black pepper
- 1/8 teaspoon red pepper
- 2 - eggs, beaten
- 3/4 cup fresh bread crumbs
- 1/4 cup finely chopped onions
- 2 teaspoons prepared mustard
- TOPPING
- 1/4 cup tomato ketchup
- 1/2 teaspoon prepared mustard
- 2 teaspoons brown sugar
How To Make cottage meat loaf (microwave version)

Step 1In a large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard. Mix until thoroughly blended.

Step 2Add ground beef. Mix gently but thoroughly.

Step 3On microsafe baking dish, form meat mixture into a 9-inch ring. Cover with waxed paper.

Step 4Microwave at HIGH power for 5 minutes. Pour off any juices.

Step 5Microwave, covered, at MEDIUM power for about 10 minutes.

Step 6Remove waxed paper. Spread top of meat loaf with the topping mixture.

Step 7Microwave, uncovered, at HIGH power for about 5 minutes longer or until meat loaf is done.

Step 8Serve with noodles or rice and a green salad.
