Ingredients
- 4 pounds corned beef brisket
- 3 tablespoons pickling spice, usually included with brisket
- 1 - rutabaga, cut into wedges
- 1 pound carrots, cut up
- 1 pound fingerling potatoes
- 1 - leek, cut into 3 inch pieces
- 1/2 - head cabbage, cut into wedges
- 1/3 cup horseradish, drained
- 1/3 cup sour cream, fat-free
- 4-5 cups hot water
How To Make corned beef and cabbage slow cooker style

Step 1Corned beef goes in the slow cooker with pickling spices spread over the top. Layer rutabaga, carrots, potatoes, and leeks IN THAT ORDER. Add 4-5 cups hot water, enough to cover meat completely. Cook high 7-8 hours.

Step 2Microwave cabbage in a microwave safe dish with 2 cups of the cooking liquid from the slow cooker for 8 minutes.

Step 3Boil, on stovetop in saucepan 1 cup of the cooking liquid until reduced by half, about 10 minutes. Mix with horseradish and sour cream.

Step 4Slice the corned beef and serve with vegetables and sauce.
