Every year on St. Patricks Day; This is a family favorite! You can put it in the slow cooker before work and the rest of the prep before dinner is a snap! Weight Watchers 12 SP (divided into 10 servings) 16SP (divided into 8 servings)

Ingredients

  • 4 pounds corned beef brisket
  • 3 tablespoons pickling spice, usually included with brisket
  • 1 - rutabaga, cut into wedges
  • 1 pound carrots, cut up
  • 1 pound fingerling potatoes
  • 1 - leek, cut into 3 inch pieces
  • 1/2 - head cabbage, cut into wedges
  • 1/3 cup horseradish, drained
  • 1/3 cup sour cream, fat-free
  • 4-5 cups hot water

How To Make corned beef and cabbage slow cooker style

  • Step 1
    Corned beef goes in the slow cooker with pickling spices spread over the top. Layer rutabaga, carrots, potatoes, and leeks IN THAT ORDER. Add 4-5 cups hot water, enough to cover meat completely. Cook high 7-8 hours.
  • Step 2
    Microwave cabbage in a microwave safe dish with 2 cups of the cooking liquid from the slow cooker for 8 minutes.
  • Step 3
    Boil, on stovetop in saucepan 1 cup of the cooking liquid until reduced by half, about 10 minutes. Mix with horseradish and sour cream.
  • Step 4
    Slice the corned beef and serve with vegetables and sauce.
