My family has been making this casserole for decades. I'm not sure where the recipe orginated, maybe mom made it up. It is so good, a one pot meal. Throw it together and shove it in the stove:) Photos to be posted later.

Ingredients
- 3 pounds lean beef short ribs
- 2 teaspoons salt
- 1/8 teaspoon pepper
- 1 - medium onion, sliced
- 1 tablespoon chopped parsley
- 1/2 cup sliced celery
- 2 - medium potatoes, quartered
- 1 tablespoon prepared horseradish
- 2 - 8 oz. tomatoes sauce with tomato bits
How To Make connie's kansas city casserole

Step 1Cut beef into serving size pieces.

Step 2Trim off any excess fat.

Step 3Sprinkle beef with salt and pepper.

Step 4Place ribs into casserole.

Step 5Brown meat in the oven, uncovered for 1 hour at 400 degrees.

Step 6Remove casserole from oven and drain off fat.

Step 7Add onions, parsley, celery, potatoes, horseradish, and tomatoes to casserole dish.

Step 8Stir casserole ingredients.

Step 9Bake an additional 1 hour at 375 degrees.

Step 10Great with a salad....Enjoy!
