Ingredients
- 1 small rump roast
- 1 tablespoon coffee grounds
- 1 tablespoon brown sugar
- 1 tablespoon mixed peppercorns (ground)
- 1 teaspoon coarse ground salt
- 2 teaspoons olive oil
How To Make coffee-pepper crusted rump roast

Step 1Preheat oven to 450°. (Remove roast from fridge at least 15 minutes before cooking.) Blend coffee, brown sugar, pepper and salt together in a small bowl.

Step 2Add olive oil to coffee/sugar mixture, stir to mix well.

Step 3Rub roast evenly with mixture, pressing to make it stick. Place in shallow baking dish. Roast for 15 minutes at 450° - don't open the oven. Reduce heat to 325° and roast for about 2 hours (use meat thermometer to reach desired doneness).

Step 4While roast is cooking, prepare little potatoes for roasting. (*Make slices in fingerling or other small potatoes, halfway down - without cutting all the way through. Put into small roasting pan. Combine melted butter and 1 tsp olive oil, pour or brush over potatoes on both sides. Sprinkle with coarse salt.) Put potatoes in the oven an hour before roast is done, everything should be ready at the same time.

Step 5When roast is done to your liking, remove from oven and let rest 15 or 20 minutes. Slice, serve with roast potatoes and a green vegetable, and enjoy. ♥
