clean out the fridge meatloaf
Whatever leftover fresh veggies I have in the crisper go in our meatloaf! I'll shred carrots, celery, onions, peppers, WHATEVER! And surprisingly, meatloaf night is one of our favorite dinner nights!

Ingredients
- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/2 package saltine cracker crumbs
- 1 large egg
- 1/4 cup milk (give or take depending on how dry your mixture is!)
- 2 tablespoons parsley flakes
- 2 tablespoons worcestershire sauce
- 1 teaspoon nutmeg
- 1/4 cup onion
- 1/4 cup green pepper
- 1/4 cup celery
- - ketchup
How To Make clean out the fridge meatloaf

Step 1Sautee onions, peppers, celery, or whatever other spare veggies you have left over in a skillet until soft.

Step 2Mix all other ingredients in large bowl and add the veggies when they're nice and soft.

Step 3Transfer mixture to a greased pan (I like the 8x8 pyrex).

Step 4Squeeze ketchup on top in whatever design you wish! ?

Step 5Bake for one hour at 400 degrees or until meat is not pink anymore.
