Whatever leftover fresh veggies I have in the crisper go in our meatloaf! I'll shred carrots, celery, onions, peppers, WHATEVER! And surprisingly, meatloaf night is one of our favorite dinner nights!

Ingredients

  • 1 lb
    ground beef
  • 1/2 c
    bread crumbs
  • 1/2 pkg
    saltine cracker crumbs
  • 1 large
    egg
  • 1/4 c
    milk (give or take depending on how dry your mixture is!)
  • 2 Tbsp
    parsley flakes
  • 2 Tbsp
    worcestershire sauce
  • 1 tsp
    nutmeg
  • 1/4 c
    onion
  • 1/4 c
    green pepper
  • 1/4 c
    celery
  • ·
    ketchup

How to Make Clean Out the Fridge Meatloaf

Step-by-Step

  1. Sautee onions, peppers, celery, or whatever other spare veggies you have left over in a skillet until soft.
  2. Mix all other ingredients in large bowl and add the veggies when they're nice and soft.
  3. Transfer mixture to a greased pan (I like the 8x8 pyrex).
  4. Squeeze ketchup on top in whatever design you wish! ?
  5. Bake for one hour at 400 degrees or until meat is not pink anymore.
