clean out the fridge meatloaf

Whatever leftover fresh veggies I have in the crisper go in our meatloaf! I'll shred carrots, celery, onions, peppers, WHATEVER! And surprisingly, meatloaf night is one of our favorite dinner nights!

Ingredients

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/2 package saltine cracker crumbs
  • 1 large egg
  • 1/4 cup milk (give or take depending on how dry your mixture is!)
  • 2 tablespoons parsley flakes
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon nutmeg
  • 1/4 cup onion
  • 1/4 cup green pepper
  • 1/4 cup celery
  • - ketchup

How To Make clean out the fridge meatloaf

  • Step 1
    Sautee onions, peppers, celery, or whatever other spare veggies you have left over in a skillet until soft.
  • Step 2
    Mix all other ingredients in large bowl and add the veggies when they're nice and soft.
  • Step 3
    Transfer mixture to a greased pan (I like the 8x8 pyrex).
  • Step 4
    Squeeze ketchup on top in whatever design you wish! ?
  • Step 5
    Bake for one hour at 400 degrees or until meat is not pink anymore.
