  • 6 lb
    rump roast
  • 2 c
    red wine
  • 2 c
    tomato juice
  • 1 large
    minced onion
  • 2
    carrots, finely minced
  • 1
    minced garlic clove
  • 1/2 c
    brown sugar
  • 2
    bay leaves
  • 1/4 tsp
  • ·
    salt and pepper to taste

How to Make Clay Hill Farm Yankee Pot Roast


  1. Do not brown the pot roast.
  2. Place the meat in a heavy roasting pan that has a tight fitting lid.
  3. Mix all the other ingredients together and pour over the meat.
  4. Cover and cook at 300 degrees for about 3/4 hour per pound.
  5. Turn roast over about halfway through cooking time.
  6. Let roast rest; thicken gravy and serve.
