rump roast
2 c
red wine
2 c
tomato juice
1 large
minced onion
carrots, finely minced
minced garlic clove
1/2 c
brown sugar
bay leaves
1/4 tsp
salt and pepper to taste

How to Make Clay Hill Farm Yankee Pot Roast


  • 1Do not brown the pot roast.
  • 2Place the meat in a heavy roasting pan that has a tight fitting lid.
  • 3Mix all the other ingredients together and pour over the meat.
  • 4Cover and cook at 300 degrees for about 3/4 hour per pound.
  • 5Turn roast over about halfway through cooking time.
  • 6Let roast rest; thicken gravy and serve.
